Ingredients
Butter

Steps

Heat generous amount of butter on a griddle, then add ginger, garlic, and kasuri methi to bloom and infuse the flavors.

Add finely chopped onions and capsicum, sauté until the onions become soft and translucent.

Lower the heat and add turmeric powder, chili powder, pav bhaji masala, and salt. Toast the spices thoroughly to develop deep street-style flavors.

Add chopped tomatoes and cook, mashing them as they break down, until the mixture becomes smooth and glossy with oil separating at the edges.

Mix in fresh cilantro to brighten and enhance the flavor of the filling.

Cut the pav bread in half, brush both cut sides with butter, and toast on the griddle until golden and crispy.

Generously fill the toasted pav with the masala filling and sprinkle with chopped onions.

Cover generously with grated cheese and garnish with fresh cilantro.

Close the pav and toast both sides on the buttered griddle until the cheese melts and the bread is heated through.

Serve hot and enjoy the buttery, spicy, and cheesy street-style masala pav.
