Ingredients

chicken drumsticks~6-8 drumsticksest.
star anise~3est.
black peppercorns~1 tbspest.
bay leaves~2-3est.
Filipino style soy sauce~½ cupest.
water~1½ cupsest.
garlica lot required, finely grated~6-8 clovesest.
coconut vinegar~1/3 cupsest.

Place chicken drumsticks in a pot and sear over medium heat until lightly browned on the outside to seal in the juices.

Add star anise, black peppercorns, and bay leaves to the pot.

Pour in Filipino soy sauce and water, stir well, cover, and simmer for about 15 minutes.

While the chicken is simmering, finely grate the garlic.

After 15 minutes, add coconut vinegar and all the grated garlic, stir well, and continue simmering for another 10 minutes to mellow the vinegar's sharpness.

Add the soft boiled eggs and simmer for another 10 minutes. Keep the lid slightly ajar to allow steam to escape.

Plate and serve. Despite its humble appearance, this dish delivers rich flavour with aromatic garlic, tangy vinegar, and peppery heat.
