Prepare the chicken breast by removing the sinews. Make a cut in the middle and open it up, then flip and make another cut to flatten. Cover with plastic wrap and gently tap with a mallet until the thickness is uniform.

Mix mayonnaise, soy sauce, sake, sugar, and dashi stock powder together, then coat the flattened chicken breast evenly. Let sit for 5 minutes.

Prepare the shiso leaves by removing the stem. After 5 minutes, sprinkle potato starch evenly over the chicken.

Fold the cheese slice in half and place it in the center of the chicken. Fold it again to cover, then place a shiso leaf on top and roll up the entire chicken, pressing the edge to seal it well.

Heat oil in a frying pan over medium heat. Place the chicken rolls seam-side down and cook for about 2 minutes until lightly browned.

Flip the rolls, add 1 tablespoon of water, cover the pan, and steam on low heat for 3 minutes.

Remove the lid and continue cooking for about 1.5 minutes until nicely browned on all sides.
