Ingredients

Chicken breast~2 breastsest.
Salt~½ tspest.
Black pepper~¼ tspest.

Sun-dried tomatoes~¼ cupsest.

Season chicken breasts with salt and pepper. Heat an ovenproof pan over medium-high heat until hot. Place chicken skin-side down, away from your body to avoid splashes. Sear until golden brown, then flip.

Once the other side is golden, place two medallions of goat cheese on top of each chicken breast. Transfer the pan to a 375°F oven and bake until the chicken reaches an internal temperature of 155°F.

In the same pan, sauté shallots in butter until softened and fragrant. Add garlic, sun-dried tomatoes, white wine, and lemon juice. Reduce the wine until nearly dry.

Add a small amount of chicken stock, lemon zest, and fresh basil. Stir gently and incorporate the goat cheese and Parmigiano-Reggiano. Keep the sauce warm without boiling to prevent the cheese from separating.

Cook the fresh fettuccine until done and drain. Toss the pasta into the warm sauce, adding a little pasta water or stock if needed to reach desired consistency. Gently combine all ingredients.

Arrange the pasta in a mound on a plate. Place the roasted chicken breast next to the pasta. Garnish with fresh basil leaves and cracked black pepper.
