Crispy chicken Caesar smashed tacos featuring seasoned ground chicken smashed with flour tortillas, tossed romaine in homemade Caesar dressing, and a toasty Parmesan breadcrumb topping instead of croutons.

In a container, combine the grated garlic, Dijon mustard, anchovy paste, red wine vinegar, lemon juice, Worcestershire sauce, olive oil, mayo, Parmesan, and salt. Use an immersion blender to emulsify until thick and creamy. Set the Caesar dressing aside in the fridge.

Season the ground chicken with salt, pepper, a drizzle of olive oil, garlic and herb seasoning, paprika, and granulated garlic. Mix well by hand until evenly combined.

Heat a griddle or skillet with a little oil. Place a portion of the seasoned chicken on it, top with a tortilla, and press down firmly with a spatula or smasher to flatten. Cook a few at a time.

Drizzle a bit of oil on top of the tortilla for extra crispiness. Cook until the chicken turns from raw pink to grayish about halfway up, then flip so both sides cook and the tortilla side turns golden and crispy.

For the crispy topping, heat olive oil in a pan, add the breadcrumbs and Parmesan, and cook until golden, toasty, and crisp.

Toss the finely chopped romaine with some of the Caesar dressing (you don't need to use it all).

Plate the crispy chicken smashed tacos, top with the dressed Caesar romaine, drizzle with extra dressing if desired, and finish with the crispy Parmesan breadcrumb topping before serving.
