   Prepare the chicken filling by removing 400g of breast and leg meat from the leftover roast chicken.

   Place the curry paste in a bowl and break it up, then pour in 130ml of boiling water and stir until the paste dissolves completely.

   Microwave the mixture for 1 minute on full power to thicken and smooth it out.

   Add the chicken meat to the curry sauce and mix well together. Cover the bowl and allow it to cool completely.

   Dust the work bench lightly with flour, place the puff pastry on top, and dust that as well.

   Roll the pastry back and forth in straight lines, turning and dusting as you go, until you reach a rectangle measuring 30 by 36 centimetres.

   Trim off any uneven edges, then divide the pastry into 4 equal rectangles, each roughly 15 by 18 centimetres.

   Stack the pastry pieces and parchment papers alternately together, then place them in the refrigerator to rest for 10 minutes.

   Preheat your oven to 170 degrees Celsius (340 Fahrenheit or gas mark 3).

    Remove one pastry piece and place it perpendicular to the parchment paper. Spoon the chicken curry filling evenly onto the centre of the pastry.

    Brush egg wash all around the edges of the pastry and over the filling area as well.

    Carefully fold the pastry over the filling and line it up. Use a bench scraper to help, and gently press out any air bubbles.

    Coat the entire pasty with egg wash.

    Use a fork to gently seal the edges on all three sides, creating both a seal and a decorative pattern.

    Cut three vent holes in the top of the pasty.

    Using the parchment paper, lift the pasty onto the baking tray. Repeat the assembly process for the remaining 3 pastries.

    Place the pasties in the preheated oven set to 170 degrees Celsius and bake for 30 minutes until golden brown and crispy.
