Cut the chicken breasts into bite-sized cubes. Spread them out in a bowl or on a cutting board, then season with salt, black pepper, ground cumin, dried oregano, paprika, and flour. Toss until all pieces are evenly coated.

Heat a large skillet over medium-high heat with olive oil. Cook the seasoned chicken in two batches, stirring occasionally, until golden brown on all sides and cooked through, about 6-8 minutes. Transfer to a plate and set aside.

Turn off the heat, then add olive oil or butter, grated garlic, and flour to the same skillet. Stir well to combine, breaking up any browned bits stuck to the bottom of the pan.

Turn the heat back to medium and gradually whisk in the chicken broth and milk. Stir constantly until the sauce thickens slightly. Season with salt, black pepper, and a pinch of red pepper flakes, scraping up all the browned bits from the bottom of the pan.

Stir in the chopped baby spinach. It will look like a large volume at first but will wilt significantly once heated. Cook for about 4 minutes until the spinach is completely wilted, then taste and adjust seasoning with salt and pepper as needed.

If the sauce is too thick, add about half a cup of chicken broth to thin it out to your desired consistency. Return all the reserved chicken and its juices to the skillet, stirring gently to coat everything with the sauce.

Crumble the feta cheese into the skillet and optionally stir in heavy cream for added richness. Reduce heat to low and let the dish simmer for about 7 minutes until the chicken is fully cooked and the sauce thickens again. Check that the internal temperature of the chicken reaches 165°F. Taste once more and adjust seasoning with salt and pepper as needed.

Serve warm. This dish pairs beautifully with toasted bread, pasta, rice, or a fresh salad.
