Chicken Kulambu (Chicken Curry)

   Heat sesame oil in a cooker and add the whole spices: cardamom, cinnamon, cloves, stone flower, and star anise. Toast until fragrant.

   Add the chopped onions and minced shallots to the cooker and sauté until softened.

   Grind the spice blend (black pepper, cumin, fennel, cloves, cinnamon, curry leaves, ginger, garlic, shallots, grated coconut, cashews, and poppy seeds) into a paste and add it to the cooker. Mix well.

   Add the tomatoes, chili powder, coriander powder, and turmeric powder. Stir to combine.

   Add the chicken pieces and bay leaves to the cooker. Mix everything together well.

   Close the cooker lid and cook on high heat until the pressure releases naturally. Allow one whistle of pressure.

   Once cooked, open the cooker carefully by releasing the pressure. Check that the chicken is tender and the curry has a rich, well-blended gravy.
