Cut the chicken into small pieces or thin slices and place in a large bowl. Add olive oil, lemon juice, balsamic vinegar, salt, black pepper, ground coriander, granulated garlic, ground cumin, dried oregano, and red pepper flakes. Toss everything together until the chicken is well coated with the marinade.

Heat a large skillet over medium heat with a drizzle of olive oil. Add the chopped bell peppers and onion, cooking for about 8-9 minutes until softened. Transfer the vegetables to a bowl and set aside.

Increase the heat to medium-high and add a bit more olive oil to the same skillet. Cook the chicken in batches in a single even layer, about 2 minutes per side until golden brown and fully cooked. Transfer the cooked chicken to the bowl with the vegetables.

Toss the cooked chicken and vegetables together. Add more peppers, onions, mushrooms, or zucchini if desired for extra flavor and vegetables.

Make the spicy green sauce by blending together one jalapeño or serrano chili, a small handful of parsley or cilantro, 2 garlic cloves, a pinch of salt, 1 cup yogurt, and 1 cup sour cream until smooth. Taste and adjust salt or spice level as needed.

Wipe the skillet clean and heat it over medium-high heat. Place each tortilla in the pan and cook for about 1 minute per side until lightly warmed and slightly charred.

Place a portion of cheese and crumbled feta on each warm tortilla. Add a generous scoop of the chicken and vegetable mixture, drizzle with some of the spicy green sauce, then roll up the tortilla and seal the edges.

Place the rolled wraps back in the skillet and toast for 1-2 minutes total until the cheese melts and the wraps are golden and warmed through on all sides.

Slice and serve the wraps with the remaining spicy green sauce or tzatziki sauce on the side.
