A casual Mexican gathering dish featuring crispy fried corn tortillas topped with an array of accompaniments including a simple tomatillo guacamole with pickled jalapeños, salsa, shredded chicken, beans, crema, and fresh garnishes. Guests build their own tostadas according to preference.

Prepare the guacamole base by finely dicing the tomatillo into small quarter-inch pieces and transfer to a mixing bowl.

Halve both avocados, remove the pit, and scoop the flesh into the bowl with the tomatillo.

Season with salt and add about a tablespoon of the canning liquid from the pickled jalapeños to replace lime juice.

Mash everything together into a simple, chunky guacamole with visible tomatillo pieces, and taste to adjust seasoning.

Transfer the guacamole to a serving bowl and set aside.

Spread a thin layer of smooth refried beans onto a crispy tostada.

Layer a couple of tomato slices and a portion of shredded cooked chicken over the beans.

Drizzle a small amount of crema over the chicken.

Add a portion of shredded napa cabbage.
