Chicken Wing Harusame Soup Teishoku

   Prep the ingredients: slice the cabbage, chop the scallion, slice the ginger, and separate the garlic cloves. Keep the dried shiitake whole. Set the bean thread noodles aside.

   In a pot, add the chicken stock with the chicken wings, ginger slices, garlic cloves, and dried shiitake mushrooms. Simmer until the chicken wings are tender.

   Add the white part of the cabbage to the broth and let it cook slightly. Season with doubanjiang, soy sauce, sugar, and salt.

   Finally, add the bean thread noodles and the green leafy parts of the cabbage. Simmer until the noodles are soft. Drizzle with sesame oil to finish the soup.

   For the stir-fried side dish: cut the pressed tofu, shimeji mushrooms, red chili pepper, and green chili peppers into bite-sized pieces.

   Stir-fry the pressed tofu and mushrooms in a pan. Add sake, brown sugar, salt, and soy sauce. Finally, add the fresh chili, green chili peppers, and Sichuan peppercorn powder, and cook until evenly coated with flavor.

   Ladle the harusame soup into bowls and serve alongside the stir-fried dougan and chili pepper dish to complete the teishoku set.
