Place the whole chicken into a pot of boiling water and boil for about 10 to 15 minutes, allowing impurities to rise to the surface.

Skim off the impurities, then add onion, garlic bulb, salt, chicken bouillon, ground cumin, black pepper, and bay leaves. Mix well.

Add two cups of hominy to enhance the pozole flavor. Turn heat to medium and cook for 40 minutes.

Remove the chicken from the pot. Add the rinsed canned hominy, roasted chile verde, and Mexican oregano. Mix well and continue cooking for another 30 minutes.

Turn off the heat. Mix maseca with a little cold water and add it to the pot to enhance the pozole flavor.

To serve, heat the bowl in the microwave for about a minute or add some broth to warm it. Add the chicken and fill the bowl with the hot soup.
