Steps

Soak the frozen tomato in water for 3-4 minutes until the skin loosens and the tomato softens slightly but remains firm.

Cut off the stem end, peel the skin, and slice the tomato into about 1cm thick pieces.

Finely chop half of the tomato slices, keep the other half in larger pieces, transfer to a bowl, add 1g of salt, and mix well.

Bring a large pot of water to a boil with about 1% salt, add the capellini, and cook one minute longer than the package instructions for a better texture when served cold.

Drain the cooked pasta, shake it vigorously in a strainer to remove excess water, then blot with paper towels to remove remaining moisture.

Add the drained pasta to the semi-frozen tomato mixture and gently toss to chill the pasta quickly, avoiding the sogginess caused by rinsing in ice water.

Prepare the shiso leaves by removing the stems, cutting in half, rolling and slicing thinly, rinsing in water, squeezing out excess moisture, and blotting with paper towels.

Add olive oil, black pepper, grated garlic, and sliced cucumber to the chilled pasta, then add the scallops cut into quarters, and gently toss everything together with tongs.

If you want more vegetables, mix in blanched snap peas or asparagus.

Plate the pasta on a chilled dish, garnish with the sliced shiso leaves, sprinkle generously with Parmesan cheese, drizzle with olive oil, and finish with a lemon wedge.
