An underrated Chinese takeaway classic featuring tender velveted beef stir-fried with generous sliced onions. The beef is marinated with baking soda, garlic powder, MSG and soy sauce for a silky texture, then cooked on high heat with onions, dark and light soy, and a touch of sugar until the sauce cooks down completely.

Topside beef, sliced against the grain300 g

Medium onions, sliced2

Prepare the beef by first cutting it into chunks with the grain, then identify the muscle fiber direction and slice against the grain into thin pieces.

Marinate the beef by placing it in a bowl and mixing with salt, MSG, garlic powder, bicarbonate of soda, dark soy sauce, potato starch, and vegetable oil until well combined.

Refrigerate the marinated beef for 20 minutes, or overnight for best results.

Prepare the onions by trimming the root and top ends, cutting them in half, removing the outer layers, then slicing along the grain into long, thin strips.

Heat the vegetable oil in the wok or pan to its highest temperature.

Add the marinated beef to the hot oil. For a nonstick wok, stir immediately; for a carbon steel wok, let it sit for 10-15 seconds before stirring to prevent sticking. Cook until the beef begins to brown.

Add the sliced onions, salt, and MSG to the wok, and continue stir-frying until the onions begin to soften.

Add the dark soy sauce, light soy sauce, and sugar, then cook on high heat until the soy sauce has completely cooked down and all liquid has evaporated.

Plate and serve immediately. Optionally, add spring onions about 30 seconds before the end of cooking for extra flavor.
