1
Preheat the oven to 325°F.
2
In a blender, combine the orange juice, pineapple juice from the can, apple cider vinegar, brown sugar, 2 pineapple slices, garlic clove, whole cloves, ground cinnamon, paprika, garlic powder, salt, mustard, and 4–5 chipotles in adobo. Blend until smooth.
3
Reserve 1/2 cup of the blended mixture; the rest will be used for the glaze.
4
Transfer the pre-cooked spiral cut ham to a baking dish.
5
Rub the reserved sauce all over the ham.
6
Pour 1/4 cup of pineapple or orange juice into the bottom of the baking dish.
7
Cover the baking dish with foil.
8
Place in the preheated oven and heat for 10 minutes per pound.
9
In a pan over medium heat, melt 2 tbsp of butter.
10
Add the reserved sauce mixture, 1/2 cup honey, and 2 chipotles in adobo. Stir and bring to a simmer.
11
Reduce heat to medium-low and continue simmering for 6 to 8 minutes until the glaze thickens.
12
Turn off heat and set the glaze aside.
13
Once the ham is done, remove it from the oven and take off the foil.
14
Brush the glaze all over the ham, making sure to coat between each slice.
15
Top the ham with pineapple slices and chipotle peppers.
16
Return to the oven and bake for an additional 15 minutes.
17
Remove from the oven and let the ham rest for a few minutes before serving.
