This delightfully sweet and moist chocolate chip banana bread is full of rich banana flavor and studded with gooey chocolate chips. A perfect way to use overripe bananas.

Preheat the oven to 350°F.

Select very overripe bananas—nearly blackened and mushy. Place them on a baking sheet and bake at 350°F for about 10 minutes until the skins darken and the flesh becomes pudding-like.

In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and sea salt. Set aside.

Place softened butter in a stand mixer bowl with the paddle attachment. Beat on medium-high speed for about 3 minutes until light, fluffy, and pale.

Scrape down the bowl. Add the granulated sugar and brown sugar if using. Mix on low speed for about 3 minutes until light and fluffy, scraping the bowl down once more midway.

Add the two room-temperature eggs one at a time, mixing well after each addition. Then add the vanilla extract. Optional spices such as cinnamon, allspice, or nutmeg can be added here.

Remove the baked bananas and let cool to room temperature. Peel and scoop the flesh into a measuring cup. Mash thoroughly with a fork or knife until pudding-like, yielding about 1½ cups.

With the mixer on low, gradually add the dry ingredients to the wet mixture. Mix until the flour is almost incorporated but some streaks still remain. Use a spatula to gently fold—do not overmix, as this would activate gluten and toughen the bread.

Fold in the mashed bananas until just combined. Reserve some chocolate chips for topping, then fold the remaining chocolate chips into the batter on low speed.

Prepare a 9-by-5-inch loaf pan with cooking spray or butter and flour. Pour the batter into the pan and level the top with a spatula.

Sprinkle the reserved chocolate chips over the top.

Bake in the preheated oven at 350°F for 60 minutes until golden brown and a toothpick inserted in the center comes out clean or with only a few moist crumbs. Cool before serving.
