Chocolate Covered Strawberries

   Select large, ripe strawberries and wash them thoroughly under cool water. Pat completely dry with paper towels—any moisture will prevent the chocolate from adhering properly. It's best to wash them well in advance and allow them to air-dry completely.

   Prepare the dark chocolate by chopping it into uniform pieces if using solid chocolate. Melt using either the microwave at half power in 30-second intervals, stirring between each interval until smooth, or use a double boiler method.

   Prepare the white candy melts by placing them in a bowl set over a pot of simmering water (not touching the water). Stir occasionally until fully melted. Keep a close eye on white chocolate as it burns easily, and maintain a low simmer rather than a rolling boil.

   If either chocolate becomes too thick, add up to 2 teaspoons of coconut oil or vegetable shortening and mix well to achieve a thinner, silkier, shinier coating.

   Dip each dried strawberry into the melted chocolate of your choice, leaving as much or as little uncovered as desired. Gently rotate to coat evenly and allow excess chocolate to drip off.
