A baked chocolate cookie with a crispy exterior and a warm melted chocolate center. The batter is made from eggs, sugars, and cocoa powder, chilled, scooped and rolled in powdered sugar, then baked and filled with a hot chocolate ganache.

In a bowl, mix together eggs, both sugars, oil and vanilla extract until well combined.

Add the cocoa powder and instant coffee, then mix in the flour, baking powder and salt until everything is combined.

Cover the batter and refrigerate for at least 4 hours or freeze for 1 hour.

Scoop about 50 grams of batter and roll it in powdered sugar.

Place the ball in a lined baking pan and gently press the top to create a pocket for the chocolate lava filling.

Bake in a preheated oven at 180°C (350°F) for 12-14 minutes.

Let the cookies cool down completely.

Heat the cream until just before boiling, then pour it over the semi-sweet chocolate chips and let sit briefly before stirring until the chocolate is completely melted.

Spoon the melted chocolate lava into the pocket on top of each cooled cookie.
