In a bowl, combine all-purpose flour and salt.

Add lard or shortening and crumble it into the flour using your fingertips until the mixture resembles coarse breadcrumbs.

Gradually add hot water to the mixture, stirring until the flour is hydrated and the dough begins to come together.

Knead the dough for 3 to 5 minutes until smooth and soft. The dough may feel sticky at first, but continue working it.

Divide the dough into equal-sized balls, cover with plastic wrap, and let rest for 15 minutes.

On a lightly floured work surface, roll each dough ball with a rolling pin, going back and forth 4 to 5 times until you have a thin tortilla.

Place each tortilla on a preheated griddle, allowing it to blister, then flip it over. Repeat with all remaining tortillas.

Cover the bottom of a skillet with oil and heat over high heat. Add small diced potatoes, season with seasoning blend, salt, and black pepper, and fry for 5 minutes.

Add diced onions, jalapeños, and chorizo. Break down the chorizo and cook for 3 to 5 minutes.

Add roasted poblano peppers and Roma tomatoes, mixing well.
