Prepare all ingredients. Wash the potatoes, tomatoes, onion, and chiles thoroughly.

Heat water in a pot, then add tomatoes, onion, garlic, and chiles to cook.

Heat oil in another pan and cut the chorizo into small pieces, then fry until golden brown.

Cut the washed potatoes into small pieces and add them to the pan with the chorizo. Sprinkle with salt and black pepper, and fry together until the potatoes are golden.

Once the tomato mixture has cooled, grind it into a smooth sauce using a blender or molcajete.

Pour the ground sauce into the pan with the chorizo and potatoes, and let it simmer and blend together.

Chop the spinach into medium-sized pieces and add it to the pot, cooking until the spinach is tender.

Once the stew is fully cooked and all ingredients are tender, serve and enjoy.
