1
Break the 500g plain cake into pieces; crumble by hand or pulse in a food processor until you have coarse crumbs.
2
Add the cake crumbs to a bowl and mix in condensed milk gradually, kneading until you reach a smooth, soft dough consistency.
3
Melt 200g white chocolate and 200g dark chocolate separately using the double boiler method.
4
Using a spoon, measure out the cake dough and roll each portion into a smooth, evenly-sized ball.
5
Place the cake balls in the freezer for 2 hours, or refrigerate for 5 hours until they are completely firm.
6
After removing the cake balls from the refrigerator, dip each lollipop stick into melted chocolate, then gently insert it into a cake ball; the chocolate acts as an adhesive.
7
Return the cake pops to the refrigerator for 1 hour to allow the sticks to set firmly in place.
8
Using a spoon, dip each cake pop into the melted chocolate to coat it completely, then gently tap the spoon to let excess chocolate drip off, creating a smooth finish.
9
Optional: while the chocolate is still wet, sprinkle sugar sprinkles for decoration, or drizzle lines of contrasting melted chocolate to create patterns.
10
Refrigerate the finished cake pops for 1 to 2 hours until the chocolate coating is completely set, then serve.
