Prepare all ingredients. Ensure the rice is cold and the grains are separated.

Add a generous amount of neutral oil to a hot wok and swirl to coat evenly.

Add the diced ham to the wok and fry until browned. Avoid stirring too much.

Add the kimchi to the wok and fry briefly to release flavors. Ensure there is always oil in the wok.

Add the white parts of the spring onions and fry.

Add the cold rice to the wok, ensuring the grains are separated beforehand. Stir thoroughly to combine with other ingredients and achieve an even color throughout.

Push the rice to the sides of the wok, creating space in the center. Pour the beaten eggs into the center and let them scramble. Add a bit more oil if needed to prevent sticking.

Once the eggs are mostly cooked, add the green parts of the spring onions, soy sauce, MSG, and kimchi juice. Finish with a drizzle of sesame oil.

Mix everything together. To evenly distribute the seasonings, pour sauces around the edges of the wok rather than in one spot. Continue stirring until the rice is evenly colored and heated through.
