1
Combine sugar and orange juice in a bowl, then add orange zest, jam, tutti fruity, chopped cherry, dates, nuts, and dry grapes. Heat the mixture on the stove until the sugar dissolves completely and the mixture achieves a good color.
2
Cool the mixture to a comfortable temperature. Pour half of the liquid into another bowl and keep the other half with the fruit mixture.
3
Heat the reserved liquid on high flame until completely dry. Coat the dried fruits and nuts with 3 tablespoons of Maida flour and mix well to prevent them from sinking during baking.
4
In another bowl, beat 3 eggs with ½ cup sugar until fluffy. Add ¼ cup oil, ¼ cup butter, vanilla essence, and a pinch of salt.
5
Add nutmeg powder, cardamom powder, and clove powder to the egg mixture and blend well.
6
Fold the fruit and syrup mixture into the egg mixture, then add 1.5 cup Maida flour and 1.5 teaspoon baking powder. Mix gently in one direction until smooth with no lumps.
7
Preheat the oven to 190°C (375°F). Pour the batter into a prepared baking pan and bake for 1 hour.
8
Remove the baked cake from the oven and let it cool completely. The cake tastes even better when left overnight before serving. Slice and enjoy this moist and flavorful Christmas plum cake.
