Ingredients
Beef for tartare (Rump or Filet)
~400 g
est.
Olive oil
for initial seasoning
~3 tbsp
est.
Egg yolks (pastured)
~3
est.
Mustard
~1 tbsp
est.
Miso or soy sauce
~1 tbsp
est.
Ketchup
~1 tbsp
est.
Worcestershire sauce
a few drops
~1 tsp
est.
Tabasco sauce
~¼ tsp
est.
Onion
finely diced
~½
est.
Cornichons
finely diced
~4-5
est.
Capers
~2 tbsp
est.
Chives
chopped
~2 tbsp
est.
Parsley
chopped
~2 tbsp
est.
Egg (for frying, optional garnish)

Steps

Select quality beef, preferably filet or rump. Season with olive oil and refrigerate until ready to use.

Prepare all accompaniments by finely dicing the cornichons, onion, and chopping the chives and parsley.

In a large bowl, combine egg yolks with mustard to form the base of the sauce.

Add miso or soy sauce, ketchup, Worcestershire sauce, and Tabasco to the egg yolk mixture.

Dice the chilled beef finely and add it to the sauce.

Add the diced onion, cornichons, capers, and fresh herbs. Mix everything together thoroughly.

Refrigerate the mixture for a couple of hours to allow the flavors to meld.

When ready to serve, optionally fry the remaining egg yolk until the edges are golden and use as garnish.
