Heat ghee and oil together in a pressure cooker.

Once the oil is hot, add cinnamon, bay leaves, star anise, cardamom, dried chilli and cashews, then stir well.

Add chopped onions and ginger-garlic paste, stir until the onions turn golden brown.

Add chopped tomato and mix well.

Add the soaked rice and stir to combine.

Pour in the coconut milk, season with salt, and mix thoroughly.

Cover the cooker and set it on high pressure for 2 whistles, then reduce heat and simmer for about 10 minutes until the rice is fully cooked.

Once the pressure is completely released, open the lid, sprinkle with fresh mint and coriander leaves, and gently stir to keep the rice grains separate.
