Preheat your oven to 180°C (350°F). In a bowl, beat together the cold unsalted butter, brown sugar, and granulated sugar until well incorporated. Add the eggs one at a time, beating well between additions. Mix in the vanilla extract until the mixture is combined.

Add the all-purpose flour, baking soda, baking powder, and salt. Mix until just combined.

Fold in the chopped Oreos, white chocolate, and semi-sweet chocolate until evenly distributed.

Portion the dough into scoops of about 130 grams each (roughly 1/2 cup per cookie) and place on a lined baking sheet. Top each with additional Oreo pieces and chocolate chips, or customize with your preferred toppings.

Optional: freeze the portioned dough for taller, chewier cookies, or proceed directly to baking.

Bake in the preheated oven for 13 to 15 minutes until golden brown.
