Crispy Chinese Chow Mein Noodles

   Bring water to a boil for the noodles. Chop the red onion into bite-sized pieces, finely mince the garlic and ginger, slice the carrot, and quarter the bok choy.

   Prepare the sauce by combining soy sauce, plant-based oyster sauce, toasted sesame oil, vegetable stock, and starch. Mix well and set aside.

   Blanch the chow mein noodles in boiling water for about 30 seconds, then drain thoroughly and shake off excess water. Heat a nonstick pan over medium heat, add 1 tablespoon of chili oil and swirl to coat the pan, then carefully slide in the noodles. Cook for 3-4 minutes until golden brown. Drizzle another tablespoon of chili oil over the noodles, carefully flip, and cook the other side for 3-4 minutes until crispy. Transfer the crispy noodles to a serving plate.

   Return the pan to medium heat, add avocado oil and sauté the red onions for a couple of minutes. Add the carrots and sauté for a couple of minutes. Add the garlic, ginger, and mushrooms, and sauté for another minute. Finally, add the bok choy and sauté for another minute.

   Stir the sauce well and pour it into the pan. Mix everything together and cook for another couple of minutes until the sauce thickens and becomes glossy. Plate the saucy vegetables on top of the crispy noodles.
