Prepare vegetables by peeling the carrot. Heat a small amount of oil in a pan and begin cooking the onion, garlic, and ginger. If you have a food processor, use it to chop the ingredients.

Add the germ-removed garlic, chopped mushrooms, pre-cut carrot pieces, and ginger to the food processor. Include the cilantro and mint leaves and blend everything together.

Pour the blended vegetables into the pan with the cooked onions. Add a drizzle of sesame oil and mix well. Add the ground beef and use a spatula or spoon to break it up, ensuring it stays loose and evenly distributed throughout the filling while cooking until done.

Transfer the filling to a bowl and allow it to cool completely before assembling the dumplings.

Soak rice paper sheets in warm water for about 20 seconds until they soften. Place them on a work surface or clean cloth. Add a generous amount of filling to the center of each sheet.

Fold the top and bottom edges of the rice paper over the filling to cover it. Then fold in the sides to form a rectangular dumpling shape and ensure the edges are sealed.

If the rice paper is thin or fragile, you can wrap each dumpling in another sheet to ensure it won't break during cooking.

Add a small amount of sunflower oil to a pan. Place the dumplings in and cook each side for about 3 minutes until golden and crispy, flipping halfway through.

Transfer the cooked dumplings to paper towels and let them drain for 2 minutes before serving.

Prepare the dipping sauce by combining soy sauce, rice vinegar or lemon juice, and honey or brown sugar. Top with sesame seeds.
