Prepare ingredients: slice the ginger, roughly chop the green onion, and cut the pork loin into even-sized pieces about 12 ounces in total.

Season the pork with ginger slices, green onion pieces, salt, white pepper powder, Sichuan pepper powder, light soy sauce, and Shaoxing cooking wine, and let it marinate for about 15 minutes.

Prepare the batter: beat two eggs, add 3 tablespoons flour and 3 tablespoons corn starch, mix well, then season with salt and Sichuan pepper powder until the batter is runny but not watery.

Add the marinated pork to the batter, mix by hand until each piece is well coated, and let sit for about 10 minutes.

Heat oil to 350–375°F until bubbling. Working in batches, add pork pieces one by one without crowding; do not stir initially to prevent breaking. Once they change color, move them occasionally. Fry each batch for 4 to 5 minutes until golden brown, then transfer to paper towels.

For extra crispiness, return all fried pork pieces to the hot oil and fry them one more time.

Prepare a dry dipping powder by mixing salt, Sichuan pepper powder, and chili powder to taste. Sprinkle it over the fried pork or serve it on the side for dipping.
