Combine the shrimp with buttermilk, a bit of buffalo sauce, and a pinch of salt. Cover and refrigerate for about 25 minutes to 1 hour.

While the shrimp marinates, mix together the flour, cornstarch, lemon pepper seasoning, onion powder, garlic powder, paprika, and salt for the dredge, and get your frying oil heating.

Working in small batches, coat the shrimp in the flour mixture, shake off the excess, and place on a parchment-lined baking sheet. Don't let them sit too long or the moisture will make the coating soggy.

Fry the shrimp in batches in hot oil, about 1.5 minutes per side, until deeply golden and crispy.

Mix the buffalo sauce with honey (or hot honey) to make the dipping sauce.

Arrange the fried shrimp on a platter, drizzle or serve alongside the honey buffalo sauce, and finish with lemon wedges and a pinch of salt if desired.
