Add 1/4 cup of sooji to a bowl, then pour in 1/2 cup of fresh curd or yogurt.

Add finely chopped medium onion, deseeded small tomato, half capsicum, two chopped green chilies, and fresh coriander leaves. Season with 1 teaspoon of salt.

Mix all ingredients thoroughly until well combined. Let sit for about 30 minutes so the sooji absorbs all the flavors.

Take a slice of bread and spread a tablespoon of the mixture evenly across it, ensuring all sides are covered. Prepare all bread slices in the same manner.

Heat a pan or griddle and add a little ghee. On medium heat, gently place the prepared bread slice onto it, dab a little ghee on top, and spread evenly.

Cook on medium to low heat for about 5 minutes, gently pressing the bread to ensure even cooking.

Carefully flip the slice to the other side and cook for another 2 minutes until the center is cooked through and the top is golden brown.

Cut the toast diagonally and serve hot. Can be enjoyed with ketchup or mayo on the side.
