Heat water in a small pot and add a quarter of a tomato, 7 serrano chiles, 2 garlic cloves, and a piece of onion. Simmer until softened — this will become the salsa.

In a separate pan, heat a little oil to prepare for frying the noodles.

Blend 3 chopped tomatoes with 2 garlic cloves, a piece of onion, a little salt, and some water to make the soup base.

Once the oil is hot, add the No. 2 fideo noodles and stir-fry until golden and toasted.

Once the noodles are golden, pour in the blended tomato soup base along with a bit more water, and simmer until the noodles are fully cooked and flavorful.

Once the chiles are cooked, remove them and set aside. Heat oil in another pan to fry the taquitos (flautas).

Roll up the corn tortillas to form the taquitos, ready for frying.

Once the oil is hot, fry the rolled taquitos until golden on one side, then flip to brown the other side evenly. Remove each one as it turns golden and crispy.

Blend the cooked chiles, garlic, and onion together with fresh cilantro and salt, without adding water, to make a thick salsa.

Once the salsa is ready, set it aside. The noodle soup should also be finished cooking and ready to serve.

Serve the noodle soup in a bowl alongside a few crispy taquitos, drizzle with a bit of sour cream, and add the spicy salsa on the side for a complete meal.
