Steps
1
Season the pork shoulder with salt and pepper on both sides, then sear in a hot skillet until browned. Set aside.
2
In a measuring cup, combine chicken stock, orange juice, lime juice, and sliced garlic. Add oregano, paprika, garlic powder, onion powder, and cumin. Mix well.
3
Place the seared pork in the crockpot and pour the broth mixture over it. Add bay leaves, cover, and cook on low for about 7 hours until the meat falls apart easily.
4
While the pork is cooking, prepare the salsa verde by blistering tomatillos, onion, garlic, and jalapeños in a skillet.
5
Transfer the blistered vegetables to a 400°F oven and roast for about 15 minutes until they soften and break down.
6
Place the roasted vegetables, fresh cilantro, chicken bouillon powder, and lime juice in a food processor. Blend until smooth, adjust seasoning to taste, and refrigerate.
7
Once the pork is tender, remove from the crockpot and shred. Place on a baking sheet and broil briefly until the edges are crispy and blistered.
8
Arrange the shredded pork on a plate and spoon some of the cooking liquid over it to keep it moist. Serve with tortillas, salsa verde, and your choice of toppings such as onion, cilantro, and cheese.
