Wash the whole chicken thoroughly using white vinegar to clean it well.

Prepare the fresh ingredients for the wet rub: finely chop the thyme leaves (without stems), onion, garlic, Scotch bonnet pepper, and sweet bell pepper.

In a mixing bowl, combine all the powdered seasonings: 1 tablespoon each of chicken bouillon powder, ginger powder, seasoning salt, garlic powder, and onion powder, plus 2 tablespoons of curry powder.

Add the finely chopped fresh ingredients (thyme leaves, onion, garlic, peppers) to the powdered seasonings.

Pour in approximately 6 to 12 tablespoons of virgin olive oil and mix until you have a wet, runny paste-like consistency rather than a dry mixture.

Generously rub the wet seasoning mixture all over the chicken, both inside and out, making sure to coat thoroughly and get the flavors inside the bird as well.

Place the seasoned chicken in a baking pan, optionally with parchment paper on the bottom. Position the birds with heads and tails alternating to make the best use of space.

Cover the baking pan with a lid or aluminum foil and place it in a preheated 375°F oven.

Check the chicken after about 1 hour. Test by gently pressing the thigh meat with your finger—it should be soft. There is no need to baste or flip the chicken.

After the initial check, remove the cover and continue roasting uncovered to allow the chicken to brown and develop a golden color. You may optionally baste lightly for extra shine.

Continue roasting for another 15 to 20 minutes until the chicken is golden brown and fully cooked. At 375°F, this should complete quickly.

Remove the chicken from the oven when done. Lightly baste it with any pan drippings to add shine. Let it rest briefly before carving and serving.
