Rinse the chicken thoroughly multiple times with white vinegar (lemon, lime, or tomato juice can be used as alternatives) to ensure it is clean. Drain well.

Prepare the jerk sauce by adding halved or quartered onion, rosemary, scallion, thyme, garlic, whole Scotch bonnet peppers, ginger, and a handful of pimento seeds to a blender.

Add about half a cup of vinegar and approximately 8 tablespoons of soy sauce to the blender and blend until smooth.

Taste the jerk sauce. If it is too spicy, add honey to balance the heat and add sweetness. The honey will mellow out and reduce the intensity of the heat.

Place the chicken on a plate. Mix together seasoning salt, black pepper, onion powder, garlic powder, meat seasoning, and dry jerk seasoning (1 tablespoon each, except black pepper which is 0.5 tablespoon). Rub this seasoning mixture thoroughly over the outside and inside of the chicken.

Place the seasoned chicken on a baking pan lined with parchment paper. Brush the jerk sauce all over the chicken, including inside the cavity.

Preheat oven to 375°F. Cover the chicken with a lid or aluminum foil and roast for 45 minutes.

After 45 minutes, remove the cover and roast for another 20 to 25 minutes to allow the chicken to brown and color. Baste the chicken with the pan drippings to keep it moist.

Remove the chicken from the oven once fully cooked. The juices should run clear and the meat should pull away easily from the bone. Serve on a platter with the pan sauce.
