Ingredients

17 lb
salt

thinned with au jus and drizzled over sliced brisket

Take a whole brisket, about 17 lb, with no trimming needed, and evenly coat it with salt and pepper.

Set the grill to direct grill mode and sear the brisket to develop a deeply charred, flavorful crust — don't worry if it gets very dark.

Before it reaches 165°F internal, wrap the brisket in butcher paper, then double-wrap it in heavy-duty foil.

Return the wrapped brisket to the grill in smoke mode and cook until the internal temperature reaches about 200°F, which can take 6 to 7 hours.

Remove the brisket and let it rest for 2 to 3 hours to let the juices redistribute.

Pour off some of the accumulated au jus, then slice the brisket — it should bend without breaking.
