In a large bowl, combine the flour with the instant yeast and sugar, mixing them together with a wooden spoon or dough whisk.

Add the warm water and salt, stirring first with the whisk and then by hand once it gets too stiff, just until all the flour is incorporated. The dough doesn't need to be smooth—it's fine if it's a bit sticky.

Cover the bowl and let the dough rest in a warm spot for about 1.5 hours.

After about an hour of rising, preheat your oven to 475°F (about 246°C) for a good 30 minutes.

Turn the dough out onto a well-floured surface, gather it together with a bench scraper, and cut it into two equal pieces.

Roll each piece somewhat loosely into a 12-inch long loaf shape—it doesn't need to be perfect.

Give each loaf a twist or two to add texture to the bread.

Dust the tops lightly with flour, then use a razor or sharp knife to slash a few cuts along the length of each loaf.

Place the loaves in the preheated oven at 475°F, immediately lowering the temperature to 450°F, and bake until golden brown.
