Wash the oranges and zest them finely with a microplane, avoiding the bitter white pith. Juice the oranges to get about half a cup, and set both aside.

Peel and mince the ginger (about a tablespoon), mince three cloves of garlic, and slice green onions for garnish.

Cut the chicken breast or thigh into uniform 1-inch pieces so it cooks evenly in the air fryer.

Place the chicken in a large bowl, crack in an egg, add a quarter teaspoon of salt, and mix well to coat the chicken.

In a shallow dish, add a cup of cornstarch (or potato starch). Working in batches that fit your air fryer, coat the egg-dipped chicken in the cornstarch, shaking off excess.

Preheat the air fryer to 400°F (about 200°C).

Arrange the coated chicken in the air fryer basket with space between pieces, spray generously with oil, and air fry for 6 minutes. Flip, spray again, and cook another 6 minutes until golden and crispy.

While the first batch cooks, combine the orange juice, zest, brown sugar, soy sauce, rice vinegar, sesame oil, ginger, red pepper flakes, and garlic in a saucepan. Bring to a boil over medium-high heat until the sugar dissolves.

Mix a tablespoon of cornstarch with two tablespoons of water to make a slurry. Whisk it into the boiling sauce and cook for about a minute until thickened and glossy, then remove from heat.

Repeat the air frying process in batches until all the chicken is cooked.

Combine all the air-fried chicken in a large bowl, pour over the sauce, and toss until evenly coated.
