Preheat your oven to 175°C (350°F).

Peel, core, and slice 4 pounds of apples into thin pieces (less than 1/4 inch thick). Transfer to a large bowl. Use baking varieties like Honeycrisp, Granny Smith, Cortland, or McIntosh.

Add 2 tablespoons of fresh lemon juice and toss gently to combine. The lemon juice adds brightness and helps balance the flavors.

Add 1/3 cup (73g) of light brown sugar, crumbling any lumps before adding. Brown sugar adds a lovely caramel flavor.

Sprinkle in 1 tablespoon of cornstarch to help thicken the filling and prevent a runny texture.

Add 1/2 teaspoon of cinnamon and 1/4 teaspoon of nutmeg (nutmeg is optional). These warm spices are classic in apple cobbler.

Pour in 3/4 cup (180ml) of whole milk and 1/4 cup (56g) of melted unsalted butter. Mix with a spatula just until the ingredients come together into a batter.

Drop spoonfuls of the batter over the apple filling using two spoons or a cookie scoop. Don't worry if it doesn't cover everything completely—it will spread as it bakes. Optionally sprinkle cinnamon sugar on top.

Bake at 175°C (350°F) for about 45 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
