Ingredients
pork steak, cut into small pieces
1½ kg
tomato
for making the green salsa
4
guajillo chiles, deveined
8
ancho chiles, deveined
3
garlic cloves
4
onion, sliced, half cut into half-moons
1
pineapple, chopped
4 tbsp
cooking oil
~3 tbsp

water
a small amount, to help soften the chiles

corn tortillas

Steps

Boil the tomatoes until soft to prepare the green salsa base.

Devein and seed the guajillo and ancho chiles.

Heat oil in a pan and sauté the garlic and a slice of onion, then add the chiles and fry until lightly toasted.

Add a small amount of water to help soften the chiles.

Cut the remaining onion in half and slice into half-moons for later use.

Blend the softened chiles, garlic, and onion into a smooth adobo sauce.

Pour the blended adobo over the cut pork pieces and mix well to coat.

Add the sliced onion half-moons and chopped pineapple, then let the pork marinate.

Blend the boiled tomatoes with the reserved chile-cooking water and onion to make the green salsa, then let it cool.

Once marinated, cook the pork in a pan with hot oil until fully cooked and nicely browned.

Remove the cooked pork from the pan; the carne al pastor is now ready.

Fill corn tortillas with the pork to make tacos, adding a squeeze of lime if desired.
