graham cracker crumbsor 180g; you may use 12 full sheets of graham crackers and crumble yourself, or substitute with favorite cookies like Biscoff or speculo1½ cups

Preheat oven to 350°F (175°C).

In a large bowl, combine graham cracker crumbs, sugar, and unsalted butter, mixing until the texture resembles wet sand with no large butter clumps.

Transfer the mixture to a 9-inch springform pan and press it firmly into an even bottom layer and partially up the sides (about 1 inch high) using the flat bottom of a measuring glass.

Bake the crust at 350°F for 15 minutes until fragrant.

In a stand mixer fitted with a paddle attachment, combine room-temperature cream cheese blocks and beat on medium-low speed for about 1 minute until smooth and creamy.

Scrape down the bowl, then gradually add granulated sugar while the mixer is running on low speed.

Add salt and vanilla extract, continuing to mix on medium-low speed.

Add the three eggs one at a time on medium-low speed, scraping down the bowl after each addition to ensure all ingredients are fully incorporated.

Add the sour cream and mix on medium-low speed for 1 to 2 minutes until silky smooth.

Pour the batter into the cooled crust.

Bake at 350°F for 15 minutes, then reduce heat to 300°F and bake for another 30 to 35 minutes until the center wobbles slightly when shaken. (Optional: use a water bath by placing a 9-inch pan halfway filled with hot water on the lower oven rack for extra insurance against cracking.)

Turn off the oven and leave the cheesecake inside for 1 hour to cool slowly.

Remove to the countertop and let cool to room temperature for about another hour, then refrigerate for 6 hours or up to 3 days until fully set.
