Prepare your pie crust. Either blind bake a homemade crust or use a pre-made pie shell. The crust should be completely cooled.

Wash and hull 2.5 pounds of fresh strawberries. Divide them roughly in half.

Place half of the strawberries in a medium saucepan with 1/4 cup water, 1 tablespoon lemon juice, and 3/4 cup granulated sugar. Mash the strawberries using a potato masher or fork.

In a small bowl, mix 1/4 cup water with 5 tablespoons of cornstarch to create a slurry.

Place the pot with the strawberry mixture over medium heat and bring to a boil, stirring occasionally.

Reduce heat to medium-low and add the cornstarch slurry while stirring well. Simmer for about 5 minutes, stirring frequently, until the mixture becomes translucent and noticeably thickened. Adjust timing based on your stove's heat.

Remove the strawberry mixture from heat and let it cool for about 10 minutes.

Once cooled, pour the strawberry sauce over the reserved fresh strawberries and gently mix to coat.

Pour the entire strawberry filling into the baked pie crust. Use a spatula to arrange the strawberries and ensure the filling reaches all parts of the crust.

Refrigerate the pie for at least 3 hours until chilled and the filling is set.
