Prepare an 8 to 9 inch square baking pan and line it completely with parchment paper. Lightly butter the paper to prevent sticking.

Chop both semi-sweet and bittersweet chocolate into small, evenly-sized pieces to ensure even melting.

Transfer the chopped chocolate and both cans of sweetened condensed milk to a medium saucepan.

Heat the mixture over low heat, stirring constantly until smooth. Pay special attention to the bottom of the pan to prevent scorching. Continue stirring until the chocolate is almost completely melted.

Working quickly, pour the melted fudge into the prepared pan. Press it down into an even layer using a spatula and smooth the top.

Refrigerate the fudge for at least 2 hours (or leave at room temperature for 3 hours) until completely set and firm.

Remove the set fudge from the pan and peel away the parchment paper. Cut into desired-sized pieces (1 inch squares recommended) and wrap in paper.
