Easy Oatmeal Scotchies

   Whisk together the flour, baking soda, salt, and cinnamon; set the dry mixture aside.

   Beat the softened butter with both sugars on medium speed for about 3 minutes until light and fluffy.

   Add the eggs one at a time, scraping the bowl between additions, then mix in the vanilla extract.

   On low speed, add the dry ingredients to the wet mixture and mix until almost combined.

   Mix in the rolled oats and butterscotch morsels (and nuts if using) on low speed until just combined.

   Scoop the dough into roughly two-tablespoon portions onto a parchment-lined baking sheet; spacing isn't important yet.

   Cover and refrigerate the dough balls for at least 1 hour (up to 72 hours), or freeze for 30 minutes to speed up chilling.

   Toward the end of chilling, preheat the oven to 375°F (about 190°C).

   Arrange the chilled dough balls about two inches apart on the baking sheet, optionally topping with flaked sea salt.

    Bake for 10 to 12 minutes until the edges are set but the centers still look slightly underbaked; let cool, as they'll continue to set while cooling.
