Preheat your oven to 400°F (about 200°C).

Remove seeds and pith from the red and green bell peppers and thinly slice them; trim and thinly slice the onion.

Heat a large skillet over medium-high heat, add 1 tbsp of oil, and once shimmering, add the sliced vegetables.

Season the vegetables with salt, garlic powder, and black pepper, and cook for about 10 minutes, stirring occasionally, until softened and caramelized.

While the vegetables cook, thinly slice the sirloin steak.

Transfer the sliced steak to a large bowl and toss with garlic powder, salt, and black pepper to coat evenly.

Once the vegetables are nicely browned, remove them to a bowl. Keep the skillet over medium-high heat, add the remaining 1 tbsp of oil, and increase to high heat.

Once the oil is shimmering, add the steak in an even layer and let it cook undisturbed for about 90 seconds.

Flip the steak and continue cooking over high heat for about 1 more minute until evenly cooked.

Add the cooked vegetables back into the steak, mix together, and remove from heat.

Split four hoagie rolls open and place them cut-side up on a baking sheet, then toast in the oven at 400°F for about 8 minutes until crisp.

Once toasted, evenly divide the steak and vegetable mixture among the buns.

Top each sandwich with 1 to 2 slices of provolone cheese, cover loosely, and let sit for 1 to 2 minutes until the cheese melts.
