A rich, creamy classic Italian dessert of espresso- and rum-soaked ladyfingers layered with luscious mascarpone cream and a gently cooked custard (zabaglione). Elegant, decadent, and surprisingly easy to make at home — no raw eggs required.

Brew the espresso or strong coffee, let it cool to room temperature, then pour into a bowl and stir in the dark rum to make the soaking liquid. Adjust or omit the alcohol to taste.

In a large bowl, combine the mascarpone with rum and whisk or beat with a hand mixer until smooth and creamy.

Set up a double boiler with about 2 inches of water in the pot, and place a heatproof bowl on top. Add the egg yolks and sugar to the bowl.

Bring the water to a gentle simmer over medium heat. Whisk the egg yolk and sugar mixture constantly over the double boiler for about 5–8 minutes until it lightens in color and thickens slightly, forming the zabaglione custard.

Remove the custard from heat and pour it into the mascarpone mixture, beating with a hand mixer until fully combined. Cover and refrigerate for about 15 minutes to firm up slightly.

Whip the cold heavy cream with vanilla extract, starting on low and increasing speed, until soft peaks form. Finish by hand-whisking to reach firm, but not overwhipped, peaks.

Gently fold the whipped cream into the mascarpone custard mixture until no streaks remain, being careful to preserve the airy texture.

In a 9x13-inch dish, quickly dip each ladyfinger into the coffee-rum mixture for just a couple of seconds (do not fully saturate) and arrange them in a single layer to cover the bottom of the dish.

Spread half of the mascarpone cream mixture evenly over the ladyfinger layer using an offset spatula.

Repeat dipping and layering a second layer of ladyfingers, then top with the remaining mascarpone cream and smooth it out.

Dust the top evenly with cocoa powder, wipe the edges of the dish clean with a damp paper towel, and refrigerate overnight to set.

After chilling overnight, slice and serve. The tiramisu should be creamy, boozy, and light — the perfect way to end a meal.
