Prepare the onion and garlic: chop one yellow onion into rough pieces (fine chop not necessary since soup will be blended), and peel six fresh garlic cloves.

In a large Dutch oven (enameled or stainless steel, never aluminum or copper), heat 3 tablespoons of olive oil and 2 tablespoons of butter over medium heat until the butter melts completely.

Add the chopped onion and stir frequently, cooking for 4 to 8 minutes until the onion is softened and translucent.

Add the minced or pressed garlic and stir frequently for a few minutes until fragrant and just starting to brown, being careful not to burn it.

Add two 28-ounce cans of whole peeled tomatoes, 3 cups of water or stock, 1 tablespoon of sugar, and 1/2 teaspoon of cracked black pepper. Stir to combine.

Bring the mixture to a boil, which takes about 10 minutes.

Reduce heat to medium-low and simmer for about 30 minutes, stirring occasionally.

Remove from heat and taste the soup. Add salt in stages, starting with 1 teaspoon, adjusting as needed for your taste preference.

Use an immersion blender to puree the soup until smooth and velvety. Avoid high-speed blenders as blending olive oil at high speed can make it bitter.

Stir in 3/4 cup of heavy cream until fully incorporated. Taste again and adjust salt or other seasonings as desired.

Serve immediately, garnished with fresh basil, cheese, or your favorite toppings.
