Prepare the cabbage by separating the firm stalks from the leaves, cutting the leaves into bite-sized pieces, and slicing the stalks diagonally into thin slices.

Remove the seeds and stem ends from both green and red bell peppers, then cut them into long bite-sized pieces.

Trim the shiitake mushroom stem end and separate it from the cap, slicing the cap into relatively thick slices and the stem into thin slices.

Slice the white part of the green onion diagonally into thin 5 mm slices.

Make the sauce by combining sweet bean sauce, sugar, sake, soy sauce, grated garlic, and potato starch in a bowl, stirring thoroughly to blend.

Dust the pork belly slices with potato starch on both sides, which helps keep the meat tender and absorbs seasoning better.

Heat vegetable oil in a pan, arrange the pork slices, and cook until both sides are lightly browned, then transfer to a tray.

Clean the pan bottom, add oil, then stir-fry the chopped ginger, chili bean paste, and fermented black beans on low heat until fragrant.

Add the green onion, bell peppers, and shiitake mushroom, turn to medium heat, and stir-fry. When the peppers begin to soften, add the spring cabbage leaves.

Continue stir-frying until the cabbage is evenly coated with oil, then pour in sake or water to help cook the vegetables, occasionally turning the ingredients over.

When all vegetables are softened, add the cooked pork slices and turn off the burner.

Stir the sauce thoroughly and pour it in, turn the heat back on to medium, and quickly coat all the ingredients evenly with the sauce. When the sauce thickens, drizzle with sesame oil and distribute evenly.
