Preheat your oven to 325°F. Prepare a silicone muffin mold or use standard muffin tins lined with parchment paper and non-stick spray. Place the mold inside a larger baking pan.

In a skillet, sauté finely diced zucchini, red bell pepper, and shallot until softened. Add a pinch of salt. Allow the vegetables to cool completely.

Add eggs, cottage cheese, sharp cheddar, salt, and pepper to a blender. Blend for about 1 minute until well combined and airy, which is essential for the proper texture.

Distribute the cooled vegetables among the molds, then carefully pour the blended egg mixture into each cavity.

Pour water around the baking pan until it reaches about halfway up the sides. This water bath creates the signature soft and bouncy texture.

Bake for 20 to 25 minutes until the egg bites are firm and have a bouncy texture.
