Prepare the spice paste: grind garlic, ginger, dried red chillies, cashew nuts, and coriander leaves with oil into a fine paste, adding water as needed to aid grinding.

Cut tomatoes in half and grind into a fine paste. Set aside.

Heat 4 tablespoons of oil in a pan. Add chopped onions and fry until golden and crispy, stirring continuously. Add a little more oil and continue cooking until onions are fully softened and brown.

Add the spice paste to the fried onions and mix well. Use low heat to prevent burning. Cook until fragrant and the onions and spices are well incorporated.

Add yogurt and continue frying for about 1 minute, mixing everything well.

Add the tomato paste and whole spices (cardamom, cloves, cinnamon, fennel seeds). Mix well.

Add chilli powder, coriander powder, and turmeric powder. Mix well.

Add 2 tablespoons of oil. Fry the mixture until it darkens and becomes aromatic.

Pour in water to create the gravy consistency.

Add peeled boiled eggs to the gravy and gently stir to coat them evenly.

Season with salt. Continue cooking on low heat until the eggs are fully flavored by the spices.

Garnish with chopped coriander leaves before serving.
